I searched high and low for a good Ginger Salad Dressing recipe. This is what I finally ended up with after some experimentation.
Ingredients
- 1/2 cup finely minced onion
- 1/2 cup peanut oil
- 1/3 to 1/2 cup rice wine vinegar
- 2T water
- 2T or more minced/grated fresh ginger root
- 2T minced/grated celery
- 1 to 2T tomato paste
- 2 to 4 tsp soy sauce
- Honey or Sugar to taste
- 2T lemon or lime
- 1 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1T miso
This is actually a very simple recipe to make. Once you have all the ingredients prepped and mixed, put the dressing in the blender and blend until it’s at the desired consistency. I like for it to be pretty well blended, but not to the point that it is completely smooth.
