This is a very rich Broccoli, Rice and Cheese Casserole that is a Southern favorite.


  • 1/2c chopped celery
  • 1 small chopped onion
  • butter or margarine
  • 1c rice
  • 2 packages frozen chopped broccoli
  • 1 large jar Cheez-Whiz
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup


Cook the 1c of rice in 2c of water with 1t of salt for 14 minutes and let sit for 10 minutes.  If you use something other than standard white cooking rice, then you may need to adjust how you cook the rice.  I like to modify this recipe and use Basmati rice for added texture.

Steam the chopped broccoli until it’s lightly cooked and bright green.  You can also use steamed fresh broccoli.

Saute the celery and onion in butter until golden and lightly browned.

Mix the onion, celery, rice broccoli, Cheez-Whiz and soups in a mixing boil.   Pour into a greased casserole dish.  Cook for 20-30 minutes at 375 Degrees F.
